Rooftop dining that shines
Pescado in Rosemary Beach offers a casual, fine-dining experience for the over-18 crowd. It
features exceptional cuisine, a thriving bar scene, a stunning view of the Gulf of Mexico, and a
dining experience unlike any other.
The menu showcases seafood (Pescado is the Spanish word for fish), but has a variety of other
dishes, as well. Executive Chef Ken Duenas said he learned how to cook from his grandmother,
then later added his own twist thanks to the many influences collected from living all over the
world.
“I’m not one of those molecular gastronomy chefs, I’m a basic chef that lets the food speak for
itself,” he explained.
His dishes are unique, memorable, and ever-changing. Guests have the opportunity to try
something new with each and every visit. Some menu items are also available in a “shareable”
platter. Co-owner and Director of Operations Steven Sapp explained what that means.
“We offer the traditional appetizers and entrée portions, but we like to offer a shareable entrée
meaning you can order a plate of the Chef’s Feast, lobster or tomahawk steak that easily feeds
three or more people. When we go out to dinner as a group, we like to pass around the plate, so
everybody can enjoy it. So, we offer that here.”
Pescado is well-known for both its cuisine, as well as its rooftop bar.
“As we began developing the concept for the restaurant, we traveled to cities like Chicago and
Nashville and saw rooftop bars were very trendy and highly coveted in those areas,” said Sapp.
“We thought we could extend that culture here in the Panhandle.”
The bar was specifically designed to offer the perfect atmosphere and a spectacular view.
“We’ve got the island bar, the two-sided bar to where you’re sitting at one side of the bar with
your friends and guests, you’re looking across the bar, not only at the Gulf of Mexico, but other
guests. If you’re willing, you can even start a conversation.”
Sapp says the knowledgeable bar staff can prepare the perfect cocktail from a Manhattan to a
martini to an old-fashioned, or anything else a guest might desire.
“We also have a very large wine list. We’re very proud of our wine cellar and our wine
collection.”
Chef Duenas, who works with the sommelier on paring wine with food, enjoys accentuating
some of the ‘old world’ wines.
“We try not to have the same thing as everybody else,” he explained. “I try to bring in different
wines to show people that this is the original Bordeaux, this is the original Cab, this is the original Pinot versus what everybody is so used to with the American palette of California and Oregon wines. Of course, we have California wines, too.”
Pescado’s group of owners strives to provide excellent food and drink, delivered by an excellent,
hand-picked hospitality staff.
“We can have the best product, the best plate, and the best-tasting cocktail, but at the end of the
day guests return for hospitality,” said Sapp. “Without a great hospitality team, managers, and
hosts, the experience wouldn’t be complete, so we focus on combining those elements to make
sure guests have a truly magnificent evening.”
Pescado is located at 74 Town Hall Road, Suite 4B, in Rosemary Beach. The restaurant is open
daily for guests 18 and over, with seatings from 4 to 9:30 p.m.; the bar is open daily from 4 to
