George’s in Alys Beach was established in 2008, and the beautiful plates of food they serve have been wowing guests ever since. Boasting a menu of progressive southern coastal cuisine, they really aim for one simple bottom line: delicious food. They take great care of the ingredients entrusted in them and the seasonal menus are chef-driven and true works of art. Whether you choose to be disciplined or decadent; none will disappoint.
Every summer brings a sense of excitement as Chef Camille Withall prepares the menu for
George’s at Alys Beach. Since taking over as executive chef five years ago, she’s developed a
reputation for fresh, locally sourced coastal dishes with unique and often surprising new flavors.
“Our menus change seasonally, so we try to get fresh ingredients and use what’s in season,” she
explained. “We also like trying different flavors and different techniques. We focus on freshness,
seasonality, and flavor and we have a lot of fun with our food.”
Withall grew up in the Philippines and brings influences from her native country, as well as other
places she’s lived, when creating new entrees and appetizers.
“We always want to try different flavor profiles on our menu, so we don’t just focus on one type
of cuisine,” she said. “We try to infuse different flavors so everybody can have something
different. Everyone has their own tastes.”
She also draws on the influences of a very collaborative kitchen staff.
“I get a lot of creative input from the talented people I work with. Sometimes one dish is created
solely by my sous chef, or another cook, or two of us together. There’s a lot of creativity going
around.”
While the menu changes seasonally, it still maintains some of the favorite dishes that keep
regular guests coming back, like the Spicy Salt-n-Pepper Shrimp, Seared Sea Scallops, fish
tacos, and more. But Withall has also added some enticing new items to try. For example this
summer the appetizer menu will feature Rabbit Rillette.
“I think it’s the first time George’s will have rabbit,” she said. “We have our carpaccio and our
different seafood, and now we have a new protein, so to speak.”
Look for other new additions, as well.
“I think people appreciate that we regularly offer something different,” she added.
In addition to exceptional food, George’s has an extensive wine and beer selection. Guests can
enjoy something nicely paired with their meal, or perhaps simply relax and have a drink on the
viewing deck while taking in the beautiful view of the Gulf.
The restaurant serves lunch and dinner seven days a week and features a Tadpole menu for
children. There are also gluten-free dishes available. And when it comes to dessert, there is a
range of options. One of the most popular is something called Warm Chocolate Toffee Goo. It’s
a combination of sweet cream ice cream, chocolate mousse, and chocolate sauce.
Withall says George’s strives to offer something for everyone. It’s that kind of place.
“We serve many different people. When you step into the restaurant you can feel the vibe of just
being welcomed and sense the camaraderie that flows from the kitchen to the front of the house.
There’s a lot of positive energy here,” she said.
George’s at Alys Beach is located at 30 Castle Harbor Drive, Alys Beach, and open 7 days a
week. Lunch is served from 11 a.m. to 3 p.m. with dinner served from 5 to 9 p.m. The restaurant
