SK Squared Café’s Executive Chef James Dillon has a top-secret seasoning blend for his burger: so secret that his wife Miriam admits with a laugh “Honestly, I don’t even know what’s in it.” However, Miriam did divulge their Modus Operandi for a good burger is starting with certified grass-fed Angus beef. “We don’t serve our guests what we wouldn’t serve our own kids” she explained. And when it comes to the cooking temperature she recommends? Her consensus is old-school: cooked much over “Medium” and a burger becomes a lost cause. This generous juicy 7 ouncer is served on a toasted brioche bun that is buttery and the perfect vehicle for the rest of the star-studded toppings – arugula, tomato, onion, your choice of premium cheeses, and a house made roasted garlic aioli packed with tons of flavor. This tasty treat is available on both their lunch and dinner menus and comes served with fries.
Speaking of fries, our 30afoodandwine.com crew was lucky enough to sample the Parmesan Truffle Fries. When just out of the fryer, these golden spud spears are tossed in truffle oil and then plated with parmesan in layers – ensuring cheese reaches every fry. I found these guys pretty addicting and was happy to hear they are also offered as an appetizer for sharing or can be subbed in as your side with a burger order.
And lastly, what’s best to wash all this goodness down? SK Squared Cafe suggests a cold beer from South Walton’s own local brewery, Idyll Hounds. The “Divide and Conch’r” is their IPA, and it pairs perfectly with this classic burger and fries order, cutting through the richness and fat and refreshing the diner’s palate. Incidentally, Idyll Hounds’ founders and co-owners Shawn Sherman and Frasier Hansen met at the original Summer Kitchen location and were valued chefs there for years. Fast forward to their craft beer being served at sister restaurant, SK Squared Café, and the family-like connection happily continues. Much like this fantastic burger, fries, and beer combination, it’s a super harmonious match.
